This has been possible since IMP 4.0.0. Users just have to enable showing the action in their preferences (strip_attachments).

We have the request from one of our Users to have the Option in IMP to remove attachements from message stored in an IMAP store. It would be a nice feature as we have many users receiving Mails with large attachements. Usually they use E-Mail to exchange documents they work on in cooperation. Usually they want to keep all the Email texts in the mailbox, but keep the attachement on their local disk (and just the latest version). The latest version of seamonkey is able to do this (by copying the mail temporarily to a local folder, remove the attachement, and then push it back to Imap store).
