What does deleting of phone numbers have to do with removing spaces 
from phone numbers? Please explain precisely what's not working and 
leave out what's working.
The exact error is: removing a telephone number from the iPhone does 
simply not remove it persistent. After a few seconds the telephone 
number appears again.

When using a mobile device (iPhone 5S, latest iOS version) with
CardDav for contacts configured, the following bug can be reproduced:
if you modify a contact by removing an telephone number the telephone 
number does not get deleted after an resync from server.
Deleting the telephone number for the contact via webmail interface
pushes the change correctly to the phone [when manually removing the 
space between numbers / and adding +49], only editing on the phone 
will directly pushes the number back on the device after a few seconds.
As a confirmation: adding phone numbers works as expected.
Everything is configured according to the wiki (service discovery,
etc.) so the CardDAV account is directly accepted just by entering
username and server.

It would be great if you could offer a fix for this.
