This is implemented for Horde 5.2 and is in the horde_5_2 branch in
git for those that want to use/try it.

in Windows Phone 7.5, from is email id, no alias / first name.
Same here with Motorola, no way to change it:
From: "samuel@sheepflock.de" <samuel@sheepflock.de>
Same "problem" on BlackBerry 10 with Horde 5.1. Only the email address
is being used. It's a bit dry.
It would be even better if we could select the identity on the device,
but I think it's a client limitation.

Samsung Android devices (such as the galaxy S2) hide the "your name"
aka real name field from the user and instead send the username.  As a
result emails sent from one of these devices via activesync come from:

tom <horde@tomseeley.co.uk>

instead of:

Tom Seeley <horde@tomseeley.co.uk>

I would like an option to be able to override this field either
directly via a configurable text option or perhaps more sensibly by
having horde pick it from the user's default profile.
