Arg! Is my locale (fr_FR.UTF-8) an issue? My apache config set AddDefaultCharset to UTF-8. php.ini contains default_charset = "utf-8" and horde charset variables are set to 'UTF-8'. I did not find anything about charset on dovecot (imap server). Do I mess up something then dumping/import DBs?
