University we have encountered this as well.
We recently upgraded to IMP 4.1 and after the migration some users,
when checking thier sent mail folder, display thier email address
under the "To:" column and not the reciepient of the email.
I say this is a bug, because why would the intended function of "To:"
be to tell you who you are?

we can only determine this from your email address(es).
it's a brand new installation (actually upgrade of 2.2 database), so
my Default Identity was not filled in the options apparently but the
sent-mail folder was properly set.
I filled all fields in there and then it works now, it properly
displays To headers in the mail listing.
considering that IMP recognizes my sent-mail folder as the 'sent mail
folder' (it displays a 'To' column in the mail listing and it has a
small icon in the folder list),
it should be able to display To headers, I do not see why it needs my
full names/emails in the options to be able to do that so it's still a
bug ;)

I've set my INBOX.sent-mail folder as the sent mail folder in the options,
it expectedly displays a 'To' column in which I supposed should be
displayed recipients of mails I have sent, but it actually shows my
own (from) address in that field which is useless in a sent-mail
folder ;)
I am using the latest CVS version of the FRAMEWORK_3 branch
