also when doing more then one changes on attributes in the history
those changes are all inserted one by one. wouldn"t it be better to
have it like in the core attributes to combine the changes of the
custom attributes into one single history entry?
Sure, but that's a separate thing - please open a new enhancement 
ticket for it.

notifications of attribute changes do work, but whether the history 
nor the mail notification show the attributes values, instead it shows 
the value id"s like this:

Notifications, which are sent out by email when tickets are created do 
not have the added custom attribute values.
When doing an update of this ticket the send mail then contains these 
attributes.
