Previously, Horde offered the option to change the "from" address
associated with an identity, so that a user logged into a single
email account could send mail that identified as being from any
number of other addresses. This new version of Horde has removed
this portion of Identities
No, it hasn't been removed.

Our service provider, Bluehost, recently upgraded to Horde 5.1.1. This
change has removed much of the functionality associated with
Identities previously available in Mail settings in Horde. Previously,
Horde offered the option to change the "from" address associated with
an identity, so that a user logged into a single email account could
send mail that identified as being from any number of other addresses.
This new version of Horde has removed this portion of Identities, and
now the only information associated with the identity is a signature.
Identities that were configured using the previous version of Horde to
have a different "from" address still show this address when composing
a message, but when the message is sent it does not actually use that
address.
