This has been discussed and rejected on both the mailing list and in a previous bug ticket. If you don't want to send a signature, create/use an identity with an empty signature.

In the current release it is not possible to edit the signature. So it would be nice if you can uncheck a checkbox for an individual message to disable sending the signature
